Samosa
Samosa is one of the most popular snacks in South Asia. It is a deep fried triangular shape with fillings inside it. It is loved by people of all ages. We can eat samosa with tea, vegetables curry and sauce. It is believed to have originated in the Middle East and later became popular in South Asian countries like India, Nepal, Bangladesh, and Pakistan. In our country, samosa is not only a snack but also a source of income for families. Small shops, tea stalls and hotels often sell samosa as an affordable and tasty food.

In my personal experience, samosa holds a special place. In past years, my mother opened a small local hotel as a source of income in our village in eastern Nepal. We prepared and sold samosa. While helping her in kitchen work, I gradually learned how to make samosa myself and I have come to enjoy it day by day. When I started to learn to make samosa, I was too young, just 10 years old. This experience taught me the value of hard work and family support.

Later, I moved from my village to Kathmandu and joined FIDR Office. There sometimes, I prepare samosa for my colleagues and they really enjoy it. One day, I prepared samosa for our Country Representative, Mao-san, too. She also enjoyed it and I was so happy to see that Japanese person was enjoying samosa which I prepared. So, I thought I would like to share the recipe I follow with everyone. Now, I will explain the process I follow step by step:

Preparing a samosa requires skills, patience and practices, especially in making a filling and folding the outer layer properly.

First, I prepare the ingredients. The quantity of ingredients depends on how many you make. Here are the ingredients to make 8 samosas.

・flour (250g),
・potatoes big size 3-4 pieces,
・beans,
・onion,
・garlic,
・ginger,
・chili (red chili powder & green chili),
・coriander,
・oil,
・spices (cumin seeds and coriander seeds powder),
・salt,
・turmeric powder.
・Peanut (optional)

Now, I explain the steps that I follow one by one:

Prepare the dough by mixing flour, water and a bit of oil. Make the dough neither too hard nor too soft. After mixing them, keep the dough aside for 30 minutes for the 3rd step.

Prepare the filling for Samosa.
At first, boil potatoes and beans until they're fully cooked. After it gets boiled, mix all the ingredients: peeled and mashed potatoes, beans, chopped onion, red chili powder, chopped green chili, chopped coriander, spices and salt (as per your taste).

Secondly, put some oil in a pan and after it gets hot, add a mixture of chopped garlic and chopped ginger to the hot oil and fry it until it looks brown and at last add a half of tea spoon of turmeric powder on it and shake it well. After that, take them out and add it to the mixture of other ingredients. At last, mix all the ingredients well.

From the dough, take a small portion and roll them into an oval shape one by one and cut in the center. Make a cone shape by using hand and water and put the filling, and cover it to make the triangular shape as you see in the video.

Heat the oil in the deep pan so that the samosa can fully dip into the oil, and fry it in a medium heat until it turns golden brown on all sides. Then, take the samosa out of the pan, and finally, it is ready to serve!
